  1. Honey is actually a supersaturated sugar solution with approximately 17.1 percent water. Fructose is the predominant sugar at 38.5 percent, followed by glucose at 31 percent.
  2. Honey is a golden fluid, which is used as a sweetener and flavoring option to white sugar.
  3. One teaspoonful of honey has 22 calories versus 16 calories in one teaspoon of table sugar. However, granulated table sugar, or sucrose, has glucose and fructose hooked together, whereas, in honey, fructose and glucose remain in individual units.
  4. The amazing fact is that if properly stored, honey will not spoil at all. A pot of honey found in an ancient Egyptian tomb was as good as fresh honey.
  5. Honey will ferment if it is diluted by moisture from the atmosphere or by other liquids. Prevent fermentation by keeping honey containers tightly sealed before and between uses.
